To actually make Vanilla Ice Cream or
any flavor of ice cream is quite easy and straight forward. Actually one of the
challenges is how to make an ice cream without an ice cream maker. On this
article we are going to look at how you can successfully make some Vanilla Ice
Cream from the comfort of your home.
The ingredients needed
To make for five big scoops of
vanilla ice cream, you will need the following:
1. You need about 500mls fresh milk (it
should be evaporated milk)
2. You need about 250mls whipping cream.
3. You need 6 egg yolks
4. You need about 60g sugar
5. You need about two tablespoons of vanilla
extract or 1 vanilla pod
You can get all these ingredients in
a big department store like Shoprite here in Nigeria.
To decorate the ice cream you will
need;

Fruits
-
Caramel
-
Honey
The utensil and equipment’s needed
1. You will need a freezer
2. You need a pot
3. You need Ice cream spoon (although
this one is optional)
4. You need a spatula.
5. You also need 2 bowls
What you need to do before you make
the Vanilla Ice Cream
1. You need to make a large quantity of
ice cubes. This is actually what will be used in cooling down the ice cream
mixture in Step 8 below.
2. If you are using a vanilla pod you
need to cut it open by slicing along it to expose the seeds.
3. You need to break the eggs and then separate
the yolk from the egg whites. The egg yolks are only what you need for the ice
cream.
The directions on how
to make Vanilla Ice Cream
1. Start by pouring the fresh milk and
the whipping cream into a sizeable pot.
2. Then add the vanilla extract. If it
is vanilla pod you are using add everything (the seeds and fibre) to the milk
and the whipping cream in the pot.
3. Then start cooking on medium heat.
4. As you are waiting for that to boil,
whisk the egg yolks very well. Then add the sugar and mix very well.
5. As soon as the contents of the pot
start to boil, you can reduce the heat to a very low level. If you actually added
the vanilla pods, you have to remove the fibre from the milk at this time.
6. As soon as you see that the milk is
no longer foaming so much (due to the reduced heat), you can slowly add the egg
yolks to the milk, the whipping cream and the vanilla mixture. You have to stir
till it is well incorporated.
7. After that increase the heat to
medium and stir continuously till you notice the solution thickening. This
should take about ten minutes.
8. Place the ice cubes into the big bowl
and then add some water to them. Pour the ice cream mixture into the smaller
bowl and place this bowl into the ice water bath. Make sure you stir the ice
cream mixture continuously (with a spatula) till it cools down completely.
9. Then place the bowl containing the
ice cream mixture in the freezer. After about 30 minutes, bring it out, stir
very well with a spatula and place it back for another half an hour. Then bring
it out and stir again. You need to repeat the process till a creamy solid is
formed. It is very important to stir very often because this will prevent the ice
from forming in the ice cream. Depending on your freezer, this process takes
between three and five hours.
10. Once you are happy with the texture
of the ice cream, serve and decorate with honey, caramel and/or fruits.
11. If you actually have any left overs, just
put them in a container, cover it and place it in your freezer till whenever. Anytime
you take it out of the freezer, it may appear rock solid unlike the ice cream you
purchased in the shops. All you have to do is to leave it on your kitchen
counter for about five to seven minutes or until it softens to ice cream
texture before serving it.
